Vegan Chickpea Salad

This vibrant chickpea-based salad is flavorful and makes a great vegan alternative to egg, potato, and chicken salads.

Ingredients

  • 3 Cups Prepared vegan chick peas
  • 1 Cup Celery, small diced
  • 3/4 Cup Sweet onion, small diced (½ large onion)
  • 3/4 Cup Bell pepper, small diced
  • 1/3 Cup Vegan mayo
  • 1 Tbsp Chicken seasoning
  • 1/4 Tsp Turmeric
  • Tt Salt/pepper

Instructions

  • Smash chickpeas with masher. Add chickpeas to the above mixture.
  • Add remaining ingredients and fold to incorporate.
  • Adjust seasoning with salt/pepper and chicken seasoning if needed.
